Hot Fudge Sundae Cake

Warning.....do not fix this if there is some one in your house hooking up your Direct TV. This guy wandered into our kitchen and helped himself to a plate.

Here is the recipe:

1 box chocolate cake mix
1 12 oz can sweetened condensed milk
1 jar of hot fudge sauce (for ice cream)
8 oz carton of cool whip

Prepare cake mix per package directions in a greased 9x13 baking dish. Take cake out of oven and while hot poke holes all over cake with handle of wooden spoon. Pour sweetened condenses milk over top of cake followed by jar of hot fudge sauce. Let cake cool and place in fridge for two to three hours. Before serving cover with cool whip. Enjoy....hide from unwanted guests!!

Jenna's Butterscotch Bars

4 eggs
1 16 oz pkg of brown sugar
2 cups of chopped pecans
1 6 oz pkg butterscotch morsels
1 tsp vanilla

Beat eggs at medium speed with mixer until frothy. Gradually add sugar, beating until thick. Add remaining ingrediants, stirring well. Spread batter in a greased and floured 13x9 inch pan. Bake at 325 degrees for 45 minutes. Cool and cut into bars.

Aimee's Chicken Enchiladas

I went over to my brother's house to watch some American Idol...should have arrived earlier for dinner. Oh well....the Girl Scout Thin Mints were calling my name and I was quick to respond. Anyways, here is my sister-n-laws recipe....

1 small onion, chopped
2 tsp vegetable oil
1 clove garlic, minced
1 can rotel tomatoes
1 cup cubed, cooked chicken
1 tsp salt
2 cups heavy cream
1 chicken bouillon
10 - 12 tortillas
4 oz monterey jack cheese
additional veg. oil for frying

Sautee onions in oil til soft. Add garlic, rotel tomatoes, chicken and salt. Simmer for 8 minutes (stir occasionally); set aside. Heat cream with bouillon, set aside.
Fry tortillas quickly in about 1/4" oil (Do not allow to crisp). Dip tortillas in cream mixture. Place 2 Tbs of chicken filling on each tortilla and roll up. Arrange seam side down in 9x13" dish and pour remaining cream over enchiladas and top with cheese. Bake at 350 degrees for 30 minutes.

Dallas Cowboy Night

The Mrs' was at work today so no dinner was made. I was in charge of the cooking tonight. Tonight was Dallas Cowboy night. The menu consisted of:

Appetizers: Tony Romo Graham Crackers.
Beverage: BLUE Kool-Aid
Main Course: Chicken -n- STARS soup
Dessert: Plenty of BLUE Popsicles and ice cream courtesy of Blue Bell

Overall the dinner was a success. Zack (our dog did sneak a lick of my popsicle when I was not looking my daughter said but it did not deter me from finishing it). McKenzie gave this a score of 9 out of 10. Avery gave it a 3 (Since she is 3 she always says the number when asked for one).


Marvelous Monkey Bread

3 packages of butermilk biscuit tubes
1 cup sugar (divided)
2 teaspoons of cinnamon
1 cup butter
1/2 cup brown sugar

Take 3 packages of bisuit tubes and cut each roll into 4 pieces. Drop roll pieces into 1 cup sugar and 2 tsp of cinnamon. Drop sugar-coated pieces into well buttered bundt pan (do not squish roll pieces when placing then in the pan).

Put 1/2 cup brown sugar and 1 cup of butter into small saucepan and bring to a boil then remove from heat immediately. Carefully drizzle over roll pieces.

Bake at 350 degrees for 30 minutes. Cool in a slightly-upright position then tip over pan onto serving plate.

McKenzie's Cake Cookies

1 box yellow cake mix
2 eggs
1 tsp vanilla
2/3 cup butter
1 bag of chocolate or butterscotch chips

Beat all ingrediants together and drop by tsp onto ungreased cookie sheet and bake 10 - 12 minutes. Remove from pan and cool on wire rack. Serve with a nice glass of white or Chocolate Olvatine milk. Hide the rest of the cookies from your Dad because he will eat them all while you are at school. :-)

Redneck Caviar

1 can Bush's Blackeyed Peas, drained
1 can Rotel tomatoes and green chilies, do not drain
1 tomatoe chopped
1 bell pepper chopped
1 onion chopped
1 can shoepeg corn, drained
1/3 to 1/2 bottle italian dressing
Of course...........do not forget the tortilla chips

Mix all ingrediants together in bowl and allow to marinate in fridge for several hour.

Donna's Chicken Nuggets!

Well unfortunately my sister-n-law is not much in the kitchen but I have decided to atleast add one of her recipes to the list that is her children's favorite.

Buy one bag of Tyson Chicken Nuggets (all breast meat is not necessary...pretty much whatever is on sale)
Cook per microwave instructions.

Enjoy!?........Serve with plenty of ketchup.

Avery's Favorite Cinnamon Toast

2 slices white bread
2 tsp butter or margarine
2 tablespoons sugar
1 tsp ground cinnamon

Use a toaster to toast the bread. Spread butter onto one side of each slice. In a cup or small bowl, stir together the sugar and cinnamon; sprinkle generously over hot buttered toast. Avery is 3 and if she can do it....anyone can.

Mema Smith's Garlic and Clam Pasta

2 Tbs olive oil
4 cloves minced garlic
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 lb fresh mushrooms sliced
1 60z can of minced clams (do not drain)
2 Tbs chopped fresh parsley or 1-2tsp dried parsley
1.5 tsp dried thyme
dash of cayenne pepper
Salt and pepper to taste

Sautee onion, green pepper and garlic in olive oil 'til translucent. Add mushrooms and continue heating in covered saucepan for 3 minutes. Add remaining ingredients. Serve over spaghetti noodles (May want to sprinkle with some parmesean cheese).

Papa Smith's Pecan Crunch Delight

1/2 cup sugar
1 cup finely chopped pecans
1 egg beaten
1 3 .5 oz instant vanilla pudding
1 cup sour cream
1 cup milk
8 oz carton whipped topping
4 bananas sliced

Combine sugar, pecans and egg. Spread on lined greased cookie sheet Bake for 15 minutes or until brown; Cool and Crumble. Mix pudding mix, sour cream and milk. Fold in whipped topping. Place half of pecan mix in a 9x13 inch dish and top with sliced bananas. Pour pudding mix over bananas and top with remaining pecan mixture. Cover and refrigerate. Serve cold.

Tacos in a Bowl

1/2 lb lean ground beef
2 tablespoons finely chopped onion
3/4 cup canned diced tomatoes, drained
2 tablespoons taco seasoning
1 cup water
1 package ramen noodles (yes I said ramen noodles)
1/4 cup shredded cheddar or Mexican cheese blend
1/4 cup crushed tortilla chips

In a small skillet, cook beef and onion over med. heat until meat is no longer pink; drain. Stir in the tomatoes, taco seasoning and water. Bring to a boil. Add ramen noodles (discard seasoning packet) Cook and stir for 3-5 minutes or until noodles are done. Spoon into serving bowls, top with cheese and chips.

Uncle Dave's Famous Mac-n-Cheese

This is actually not bad considering that my brother has trouble making a bowl of cereal for breakfast!

8 oz box elbow macaroni
1 cup mayo
1 can cream of mushroom soup
4 cups sharp cheddar cheese (shredded)

Preheat oven to 350 degrees. Cook macaroni as directed then drain. Combine macaroni with mayo, soup and cheese. Place in well greased 9x13 baking dish. Bake uncovered about 30 minutes or 'til bubbly throughout. (May cut back on cheese if this is too cheesy for your taste).

Beer Rolls

2 cups Bisquik
6 oz Beer (room temp)
1 heaping T. sugar

Grease 12 muffin tins, mix ingrediants quickly. Bake at 425 degrees until brown.

VERY GOOD BROWNIES

6 eggs
3 Cups sugar
1 Cup Corn Oil
2 Cups Flour
1 Cup Cocoa
1 tsp. salt
2 tsp. vanilla

Preheat oven to 350 degrees. Beat Eggs. Add sugar and oil, then beat mix again. Sift flour with cocoa and salt; add to egg, sugar and oil mixture. Add the vanila. Turn into 2 greased 8 x 8 inch pans or (best this way) one long 13 x 9 inch pan. Bake for 30 minutes.

Another Favorite

Honey Bun Cake

MMMM.....This is one of my favorites.

1pkg. Duncan Hines Yellow Cake Mix (without pudding)
3/4 cup sugar
2 T of cocoa
1/2 cup of milk
2 T butter, melted
1 tsp vanilla extract
3/4 cup firmly packed brown sugar
1/4 cup cocoa
1 1/4 cup boiling water

Preheat oven to 350 degrees. Combine 1st three ingredients into a bowl. Add milk, butter, and vanilla stirring well. Pour into a lightly greased 7x11 baking pan. Combine brown sugar and cocoa, sprinkle over batter. Carefully pour boiling water over top (DO NOT STIR). Bake at 350 uncovered for 30 minutes. Be careful with this one. This is not on the Dr. Atkins list!

Grits Casserole

Even my 8 year old loves this one:

4 Cups Water 1/2 cup milk
1 Cup grits (not instant) 1 lb. bulk pork sausage
1 tsp. salt 1 lb. pkg. of Velveeta Cheese (Grated) save 1/2 cup for the top
4 eggs 1/4 cup of butter

Add the salt to the four cups of water and bring to a boil. Stir in the Grits and cook until they are done. Fry the sausage and drain. To the cooked grits stir in the butter, milk, and the eggs (sightly beaten). Add the sausage and cheese stirring until thouroughly mixed. Pour into a 9x13 inche baking dish that has been sprayed with Pam. Sprinkle the top with the remaining cheese. Bake at 375 degrees about 35 to 45 minutes.

Have fun. Your kids can even lend a helping hand with this.

My First Post

This is the first entry. My wife is an excellent cook. My wife constantly has friends calling our home asking for the recipe to everything they have had at our home. In order to help my friends I will be posting some of my favorite recipes.
